Creamy Salmon Soup
Made and pairs with The Other Way Chardonnay
Serves 6
Ingredients
1 fillet of salmon
2 litres of fish or chicken stock
¼ cup butter
1 Leek
1 clove of garlic chopped
2 carrots
2 tbsp flour
4 potatoes
1 bay leaf
Small bunch of parsley
50 ml heavy cream
100 ml The Other Way Chardonnay
Salt and pepper to taste
Preparation
Chop the onion and garlic finely. Cut the carrots and potatoes into pieces. Heat ¼ cup of butter in a saucepan. Place cut up onions, carrots and potatoes in to the saucepan to fry, stirring occasionally for 5-6 mins. Add garlic and flour, stirring for another minute. Pour the wine and cook to evaporate the alcohol, about 2-3 mins. Add broth, bay leaf, salt and pepper to taste. Bring to boil and cook covered over medium heat for 15 mins. Meanwhile, dice the salmon fillet into pieces. After 15 mins, put the fish in the soup and bring to a boil. Cook for 5-7 mins and turn off. Add finely chopped parsley and heavy cream. Add lemon juice if desired.
Serve with a glass of The Other Way Chardonnay!
