Made with Cherry Wine

Ingredients
Brownie
¾ cup dried cherries
⅓ cup Cherry Wine
1 cup butter
2 cups sugar
4 large eggs
½ tsp vanilla or almond extract  flavoring
⅔ cup all purpose flour
¾ cup cocoa powder (unsweetened)
½ tsp baking powder
½ tsp salt

Chocolate Ganache
½ cup Cherry Wine
½ cup whipping cream
1 cup semi-sweet chocolate chips

Preparation
Brownies
Mix cherries and Cherry Wine in a small saucepan and bring to a boil over medium heat. Reduce heat and simmer for 2 mins. Remove from heat and let cherries cool to room temperature. Heat oven to 350F and lightly butter and flour (or line with parchment paper) a 9×13-inch metal pan. Cream butter and sugar mixture until well blended. Add eggs and flavoring, mixing thoroughly. Mix together dry ingredients (flour, cocoa powder and salt). Blend into butter mixture, blending until mixture is smooth. Stir in wine-soaked cherries along with any of remaining wine in the saucepan. Spread batter evenly in the prepared baking pan. Bake for about 40 mins or until a tester comes out clean. Cool to room temperature.

Ganache Topping
Bring Cherry Wine to a boil in a small saucepan over medium heat. Reduce to 2 tbsp. This takes a bit but watch closely as it thickens (it can burn and makes a mess in the saucepan and wastes wine). Pour the reduced wine over chocolate chips in a bowls. In the now empty saucepan, add whipping cream and heat just to a boil. Remove from heat once a boil is reached and add the chocolate and reduced wine to the hot whipping cream stirring until the chocolate has melted and the mixture is smooth. Cool slightly and spread over the room temperature brownies.

Allow to set for as long as you can leave them alone:-)
