Pairs with Cassis
Serves 6.

Ingredients
3 Tbsp extra virgin olive oil
3 Tbsp Elephant Island Cassis
2 Tbsp chopped shallots
2 Tbsp minced peeled fresh ginger
4 tsp Sherry wine vinegar

Preparation
Whisk ingredients in small bowl to blend. Season dressing very generously with salt and pepper. Delicious with a grapefruit, avocado and butter lettuce salad.
